Atlas Olive Oils has carefully approached all aspects of its organic EVOO production process, adopting sustainable procedures to ensure full satisfaction. The company's organic EVOO, "Desert Miracle," is made from a blend of Dahbia (a Moroccan variety) and Arbequina (a Spanish variety) olives, grown in the ElBorouj region at an altitude of 340 meters.
The olive grove covers 200 hectares (495 acres) of a diverse, well-aerated soil composition, with 25% clay, 30% muddy/loamy, and 45% sandy. The olive trees are pruned into cups or hedges, with a density of 1,852 trees per hectare. The annual production of this ultra-premium organic EVOO is 330,000 liters, with a maximum acidity of 0.2% when bottled.
Harvested from late September to late December, the olives are first cold-pressed at a maximum temperature of 26°C, using a two-phase continuous system. The yield ranges from 11.0% to 14%.
